Smoked Trout Dip perfect for a cocktail party

Hosting a cocktail party provides a wonderful and often simple way to entertain. What gets easier than drinks and hors d’ouevres?
 
Typically, I’ll fall back on cheese and crackers and/or shrimp cocktail, because of their easy preparation. But this recipe literally takes only 10 minutes to prepare and everyone enjoys it.
 
Recently, I came across a similar recipe while flipping through Garden & Gun Magazine. Leary of some of the ingredients, I altered the recipe slightly. I omitted the horseradish and added lemon juice and capers.

A delicious treat, it definitely earns a spot on my list of favorites.
 

Smoked Trout Dip
 
8 ounces cream cheese, softened
½ cup sour cream
Zest of one lemon
Juice of one lemon
8 ounces smoked trout fillet
2 tablespoons capers
1 lemon, thinly sliced (optional)
 
In the bowl of a stand mixer using the paddle attachment or in a medium bowl using handheld mixer, blend the first four ingredients. Break the trout into small pieces, removing any tough ones, and blend in with cream cheese mixture. Once blended, stir in the capers. Chill for an hour to allow the flavors to meld before serving.
 
Garnish with lemon slices and serve with rice crackers.
