A balsamic vinaigrette dressing compliments the sweet and tart combination.
This salad is light, colorful, refreshing and so easy to make. But never in a million years would I have thought to put these ingredients together.
The first time a friend served it, I was quite skeptical. But, because I love watermelon and feta, I gave it a try. After tasting this refreshing salad, I found it to be a wonderful combination. The salty feta compliments the sweet watermelon.
If you’ve never had this salad and wrinkle your nose at the thought, I highly recommend you give it a chance.
Watermelon, Feta and Arugula Salad
Serves 2 or 3
3 to 4 ounces Arugula lettuce
3 cups seedless watermelon, cut into ¾ inch cubes
½ cup Feta cheese, crumbled
½ cup red onion, thinly sliced
Yields ¾ cup
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
½ cup olive oil
1 teaspoon salt
¼ teaspoon pepper
In small bowl whisk together balsamic vinegar, Dijon mustard, olive oil, salt and pepper.
Place the lettuce, watermelon, feta and red onion in large bowl. Drizzle with vinaigrette to lightly coat the lettuce and gently toss.
